Mixology at its finest!

Dalio Calado is native to Lisbon, Portugal. At the age of 18, Dalio began working as a flight attendant for SATA International. This experience afforded him the opportunity to travel all over the world, visiting the likes of Brazil, Africa and the Caribbean, where he began to enhance his palate for exotic foods, cocktails and flavors.

Dalio developed his skills as a mixologist/bartender at the ripe age of 21, when he began working the disco circuit in Lisbon. Intent on investigating the inner workings of the New York restaurant scene. He soon found Giorgione, touted for its “top notch ingredients” (Zagat Survey) and for celebrity owner/food connoisseur and gourmet grocer Giorgio Deluca, of Dean & Deluca notoriety.

Dalio has since partnered with numerous big name liquor companies developing specialty cocktails, designing event beverage menus and creating brand partnerships. His talent landed him the title of head mixologist for Christiania Vodka, St. Germain, Bulldog Gin & 44th North Vodka. He has worked with private chefs to create innovative and exploratory food/cocktail pairings. Dalio is presently working with several of the aforementioned companies to invent original seasonal beverages for Spring/ Summer 2009.

As a mixologist, Dalio’s philosophy is to reexamine and reinvigorate the classics – to introduce a fresh spin on all of your favorite cocktails while maintaining the heart of the recipe that makes each of them unique and delightfully familiar. His drinks are truly a transcendental experience.
